Fisherman
The Fisherman is a villager profession that buys caught fish for Obols. Its job site block is the
Barrel. It is the main villager that pays the player, and the developer designed it as a reliable income for players who prefer fishing to other ways of earning obols.[1]

All trades can be used 999 times before restocking.[2] Every level offers all of its trades.
Buying fish
The fisherman buys each fish at the level that matches its rarity, so a fisherman has to be leveled up by selling common fish before it buys rarer ones:

Only fish caught with a fishing rod are accepted. The trades require the rarity line that the fishing loot tables add to each catch, so cod, salmon, pufferfish or tropical fish dropped by killing a mob cannot be sold.[3] Fish caught before 1.12.1-alpha have an older item format and no longer match the trades.[4]
The developer tied fish to levels to keep rarer fish from being "spoiled" in the trading screen before the player has caught them.[5]
Angler's Almanac
At Novice level the fisherman sells the Angler's Almanac for 1 obol.
