Cobblestone is the rough stone that limestone (stone) drops when mined. In Matcha Flavoured it is the start of the pack's rock-processing chain: a mud kiln fires it into limestone and a blast furnace breaks it down into gravel.

Breaking
Limestone drops cobblestone when mined without Silk Touch, as in vanilla.
