An ingredient is an item used to make food. Matcha Flavoured divides them into intrinsic ingredients, which decide what effect a dish grants, and base ingredients, which make up the rest of the recipe. Most dishes combine one intrinsic ingredient with a few base ingredients, so learning what each intrinsic ingredient does lets a player predict any dish made from it.[1]

Intrinsic ingredients

Each of these carries one effect, which cooking "awakens". Raw, they only heal a little.

Golden Apples and golden carrots are stronger, secret variants of apples and carrots. Pufferfish carry  Conduit Power.

Base ingredients

These have no intrinsic. They provide healing and structure.

Grains and doughs
Wheat GrainFlourDoughBread or Naan. Flour can be stored as a Bag of Flour. Seitan is a meat substitute made from dough.
Sweeteners and spices
Sugar (from sugar cane, molasses or honey) and estus ash, which serves as the spice in empanadas, cupcakes, curries and toasts.
Dairy and eggs
Milk Bottles, cheese and eggs (any of the three egg colors).
Fat
Oil, pressed from sunflowers or cocoa beans.
Vegetables
Potatoes, brown mushrooms (also the pickling agent), cactus, ferns, dandelions, blue orchids, bamboo and green dye.
Meat and fish
Cooked meat, fish and their raw forms, used in pizzas, stroganoff, stocks and nuggets. Meat has no intrinsic.
Containers
Glass bottles for preserves and bowls for stews and curries. Both are returned when the food is eaten.

The five stocks are crafted ingredients that are cooked in an oven into the oven meals.

Items reused as ingredients

Datapacks can't add new items, so most of the pack's ingredients are vanilla items with a new name, model and components. For example, flour is a renamed enderman spawn egg, dough a shulker spawn egg and baked pumpkin a breeze rod. Spawn eggs are used for ingredients that shouldn't be edible, since spawn eggs can't be eaten.[2] See Renamed items.

The developer stated that no more ingredients would be added until datapacks can add their own items.[3]
