For how this works in unmodified Minecraft, see Potato on the Minecraft Wiki.
A potato is a raw ingredient with no intrinsic. It doesn't heal when eaten raw, but a baked potato heals 5 ( × 2.5), and potatoes are the base of several filling meals.[1]

Usage
Food
A raw potato keeps its vanilla food values and doesn't heal.
Picking up a potato unlocks the baked potato recipe. Baked potatoes are used in pickled potatoes, latkes, gnocchi and fish and chips. Raw potatoes go into seitan and curry stock. A potato cooked in a mud kiln becomes a charred potato.
Poisonous potato
Poisonous potatoes are unchanged, but the item is the base of most of the pack's foods: pumpkin empanadas, jams and most meals are poisonous potatoes with a custom name, model and food component. Natural poisonous potatoes have no use in cooking.
